December Goals

I haven’t done this in a while but I need to be more active on Tumblr. Just sayin.

Goals for DECEMBER!

  • Drink 2+ liters of water a day.
  • Get to the gym at least 5-6 times a week, switching up my routine to 3x Cardio (Running, Spinning, Cross trainer, Stairmaster, ect.) 3x Strength (mostly toning Abs, Arms, Legs, Butt)
  • Try squeezing in Yoga once a week. 
  • Try a new healthy restaurant once a week.
  • Set aside an hour per day reseaching/applying to jobs.
  • No eating after 7:30pm.
  • Read at least one book this month.
  • Reconnect with friends.
  • Start planning trips for my 2012! (Hoping for Austin, Seattle, and Albuquerque Balloon Festival)

Pumpkin Chocolate Chip Cookies

I made cookies and forgot to take a picture! Oh no I don’t know what is wrong with me! 

The original recipe was CRAZY it said the calories per serving for 12 cookies was around 400… PER COOKIE! 

So I made lots of adjustments!

  • 1 cup organic canned pumpkin
  • 1 cup splenda white sugar
  • 1/2 cup unsweetened applesauce vegetable oil
  • egg white  egg
  • 2 cups whole wheat flour all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon milk
  • 1 tablespoon vanilla extract
  •  cups semisweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
  2. Add vanilla, chocolate chips and nuts.
  3. Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

BOLD are my changes. And it made for like 30 mini cookies NOT 12 massive ones like the recipe called for… all about portion control AND they came out super moist!

ING NY Marathon and Expo

Congrats to any followers, friends, and finishers of the ING NY Marathon today! I myself did not participate but me and my bf did make it over to Central Park to watch and cheer at the finish line…

However, I did get to make it over to the Health Expo at the Javits Center which was a runners dream. They had every running equipment and product available. I got to try some amazing energy samples which really excited me since I’m never quite sure what to eat and fuel up on pre/during/post run so it was fun it try new products. They also had this bib holder which I kinda want on my Christmas list as well as compression pants SO bad! I need them! The expo also got me really pumped to try training for a 1/2 marathon.

NYRR is starting up a 1/2 marathon training program for their 1/2 in March… Only problem is that would mean I’d have to train in the 2 coldest months in NY and I also kinda want to train for the Princess 1/2 even though it’s a stretch and registration might be closed AND that would mean I’d be training in winter for a 1/2 marathon that will feel like summer since it’s never cold in Florida. Decisions decisions.

Herbal Cleanse= Colon Blow???

I have recently been into fresh juice lately so when I passed by The Juice Press I got excited… Until I saw all the cold pressed juices for like $11. I know it’s super healthy but that’s expensive… Instead I grabbed the herbal cleanse $5. Now reading it I’m kinda scared of the warning label :-/ I don’t want a quick fix for dropping weight but I do need to clean all the toxins out of my body. We shall see how it works…

Side note, I’ve only recently been starting to get into this kind of stuff. One of my internships are big health nuts… The company gets free yoga classes (which I tried out today), all organic fruits and snacks for the office… So it’s wearing off, and I always love learning and trying out new things when it comes to health and nutrition so why not ;)
